Ok, here’s the deal. I WAS SERIOUSLY MISSING SANDWICHES. At least, I was until I discovered this recipe. First let me tell you that I tried several “low carb” bread recipes and none of them were all that amazing. This one isn’t exactly as incredible as the recipe’s title might lead you to believe either. No matter what, it’s nothing close to the (former) joy I had with a fresh loaf of rye bread. It’s inevitably denser and more crumbly than “normal” bread.
That being said (if I haven’t scared you off already), here’s what this bread has going for it. Despite being dense and crumbly, it’s quite tasty and you can actually make toast with it! That’s pretty noteworthy, because any of the other bread recipes I’ve tried could not stand up to being toasted.
The final product is only half as tall as a regular loaf of bread because without flour, sugar, and yeast, bread just doesn’t rise much. So your sammies are pretty small sammies. That’s ok. Have twice as many!
Let me tell you, though, after completely giving up sandwiches, toast, or any kind of wheat bread for so long, it was WONDERFUL to have a toasted turkey, lettuce, and cheese sandwich with heavy mayo!
